A first cutting board: an edge-grain plan I have not built
A starting size you change to your lumber, and clamps from one guide that did not lab-test them. I have not glued this up.

How I built this guide
Sources I read. howtomakeacuttingboard.com on clamps, plus the glue and finish notes.
What I cross-checked. Edge grain versus end grain as a first glue-up, which is shop teaching rather than a product test.
What I could not verify. Wirecutter’s Boardsmith recommendation. Search summary only.
Most sources suggest this if you can joint an edge until no light shows and you will use one species; skip it if you want end grain on the first try, or a softwood you will actually cut on.

Bessey K Body REVO
Upper mid. One source, no second opinion.
howtomakeacuttingboard.com recommends parallel clamps for a flat panel and says it did not run a lab test.
One guide, and that guide is honest about not testing.

Bessey pipe clamp H style
Budget. One source, no second opinion.
The same guide’s cheaper option.
Iron pipe can stain the glue line, and the pipe is extra.

Jorgensen I-bar
Mid. One source, no second opinion.
Named in that same clamp guide. I did not search a listing.
One mention.

This is an edge-grain board: strips glued along the long edges. I have not made it. End grain is a grid of end-grain joints and a worse first glue-up. Hard maple, beech, walnut and cherry are the species these kitchen notes repeat. One species. If you do not know a local wood, look up a toxicity reference before it touches food. I am not naming a South American species as safe from memory.
- Time
- A weekend, if the edges already close. I have not timed it.
- Difficulty
- Medium if you can joint an edge. The hard part is the light through the joint, not the oil.
- Size
- Start near 300 × 200 × 30 mm. Change it.
- Wood
- One hard, tight-grained species.
Based on ordinary edge-grain teaching and one clamp guide. I have not built it.
What the experts say
Low on the clamps: one guide, and it says it did not lab-test. The glue-line rule is older shop teaching.
howtomakeacuttingboard.com wants parallel clamps for a flat panel, alternating over and under, with cauls. The author says there was no lab test.1 A dry joint that shows light will not be fixed by glue. That is the sentence I am willing to repeat without a test of my own, because every glue note says the same thing.2
What owners report
I do not have an owner thread I opened on these clamps. A Reddit debate about parallel clamps versus pipe clamps was not a quote I could verify.
Where they disagree
The clamp guide’s cheap option is a pipe clamp, with the stain risk from the iron pipe. The expensive option is a K Body. They are not disagreeing about the board. They are disagreeing about the budget. Jorgensen’s I-bar is a mention, and I did not search a listing.
My take
Joint the edges until a lamp shows no light. Use a PVA meant for wood, from the glue note. Skip juice grooves. Oil last, from the finish note, and only after the glue has cured for the time on the bottle. If the only saw you have leaves a washboard edge, fix the edge. Do not ask the glue to be a shim.

List adapted from a common edge-grain layout, not from a measured board of mine. Millimetres rounded to 1 mm.
