A cutting-board finish: where the sources disagree
Mineral oil, a non-drying brand oil, Osmo, and a bowl finish the maker may not intend for knives. I have not oiled a board.

How I built this guide
Sources I read. Sawdust Journey, The Wood Whisperer, a Fine Woodworking forum thread on Walrus Oil.
What I cross-checked. Where the maker and a teacher name different products.
What I could not verify. Wirecutter, Clapham’s, and the 2025 Consumer Reports winner.
Most sources suggest this if you want the simple renewable oil and you will read the label; skip it if you want a film that a knife will crack into food.

Howard cutting board oil
Budget. The sources disagree. Read the notes in the guide.
Sawdust Journey and The Wood Whisperer agree it is simple mineral oil you renew often. The Wood Whisperer wants something more water resistant. Wirecutter’s pick was not a page I could open.
A reader said the conditioner stayed oily for a week.

Walrus Oil
Budget to mid. The sources disagree. Read the notes in the guide.
Sawdust Journey presents an NSF oil. A Fine Woodworking forum thread is skeptical of non-drying oils. The maker replied that it is not meant to cure.
It does not cure, on purpose.

Osmo TopOil 3028
Mid. One source, no second opinion.
Sawdust Journey cites a food-contact claim and a slow schedule. One source. I am not linking the 3058 ASIN that 404’d. The 3028 listing on Amazon.es was open.
Slower than mineral oil.

General Finishes Wood Bowl Finish
Mid. The sources disagree. Read the notes in the guide.
The Wood Whisperer uses it, thinned, on end-grain boards. Sawdust Journey says the maker points people to a different product for cutting surfaces.
The maker and one teacher do not say the same thing. A long cure.

A cutting board is a surface you wear out. I have not finished one. Film finishes crack under a knife. That is why these sources argue about oils instead.
What the experts say
Low to medium. Two writers agree mineral oil is simple. They do not agree it is enough. One product has the maker and a teacher on opposite sides.
Sawdust Journey and The Wood Whisperer both treat food-grade mineral oil as the simple start, and both say you renew it.12 The Wood Whisperer wants more water resistance and uses General Finishes Salad Bowl Finish, thinned, on end-grain boards. Sawdust Journey says the maker points people to a different product for cutting surfaces.
What owners report
A reader on The Wood Whisperer’s page said Howard’s conditioner was still oily after a week. On the Fine Woodworking forum, people are skeptical of non-drying oils. Walrus replied that theirs is not meant to cure.3
Where they disagree
Mineral oil: simple versus not water resistant enough. General Finishes: a teacher uses it, the maker’s other recommendation is what Sawdust Journey reports. Osmo TopOil is one blog and a slow schedule. I am linking the 3028 listing that opened, not the 3058 ASIN that 404’d.
My take
If you want the boring option the sources can explain, it is food-grade mineral oil, renewed when water stops beading, and you read the bottle. If you want the finish a teacher prefers and the maker may not, read both pages before you buy General Finishes. I have not oiled either. Do not put polyurethane on a board you cut on.
The build is the first board.

Common questions
Can I use polyurethane?
Not on a board you cut on. Knives crack a film. That is the point of these articles, not a test of mine.
Is mineral oil permanent?
No. It does not cure. The Wood Whisperer says it can want a monthly renewal.
